A lover of his South-West and its ancient tradition, this cult chef of Landes gastronomy initiated his son Francis to the culinary arts, great wines, and fine Gascon brandies. It is by cultivating this taste for tradition and authenticity that Francis Darroze, by exploring this famous terroir of Bas-Armagnac with his father, an informed and demanding oenophile, and by tasting treasures hidden deep in small estates, became a true discoverer of owner-produced Armagnacs.
The first discoveries date back to the 1950s and 60s, then intensified from the 1970s with the construction of a cellar specifically dedicated to aging.
