GIN LA BOUCHE #1 Cap Ferret

This is the gin of all fantasies, the one the La Bouche team had in mind when launching the TameSpirits project in 2019.

It is a Gin with an atypical and unique taste whose profile is based neither on citrus fruits nor on a herbaceous dominance. It is composed of 12 ingredients that harmonize and balance each other perfectly.

Cap Ferret oyster shells, samphire, vegetable oyster, juniper, and pink peppercorns (among others ;) deliver subtle aromas, very finely iodized and slightly vegetal.

Don't expect a "marine" Gin here; we are between land and sea with a lot of complexity. It is a Gin to be drunk neat or that will bring a dry and completely identifiable character to your Gin Tonics or cocktails.

Gin La Bouche: Low temperature and individual ingredient processing

The techniques used to make our Gins are directly borrowed from some of the kitchens of the greatest restaurants.

We work with a type of sealed still, called a rotary evaporator (or Rotavap for short), which allows us to create an almost complete vacuum. Thanks to this, the boiling temperatures drop and distillation takes place between 25°C and 30°C!

Each of the 15 organic ingredients used for our Gins is carefully selected for its quality before being macerated in alcohol baths with more or less high alcohol by volume depending on the ingredient. We generally choose short but generous botanical macerations.

What are the benefits of low temperature?

While aromatic molecules are generally altered at around 40°C, low-temperature work allows for a very direct and unaltered flavor restitution.

For the fresh and mineral aromatic profiles we were looking for, these technical solutions are ideal.

Working with distillate blends also gives us great precision and flexibility for a perfect restitution of our recipes.
